Full stop a must visit for any wine buff. The exquisitely expressive wines here are unique and beautiful at a level seldom achieved. We would actually start with the Shirazes, which are just so expressive of the earth from which they have produced their fruits. The 2014 Shiraz drinks like a garden, with notable hints of olive, dill, baking spices and tomato leaf, all against a well rounded and perfectly structured backbone. Had we not already 300 bottles at home, we would have stocked up on their vertical Shiraz tasting pack (because we were desperate to know how the 2012 and 2013 were). And then there is the Pinot Noir, the wine for which PH is perhaps best known. The 2015 L’ami Sage Pinot is in another realm from what you can generally find in Australia. Perfumed, sharp, vibrant, almost aggressive violet colour and flavour, but again, set on a seamlessly smooth and reassuringly earthy foundation. A dark and long-finishing Pinot to be sure. If power + grace = elegance, this wine is the definition of the word. If you truly love serious wines and winemaking, this would be one of the handful of stops in the entire Mornington that you just cannot miss.
